First edition of the "first truly insightful English-language Chinese cookbook" (Mendelson, p. xix). It delineated Chinese cuisine as a specific aspect of American culinary culture, and Chao's recipes were later cited in such classics as the 1975 edition of Irma Rombauer's The Joy of Cooking, the most popular cookbook in the US at the time. During the Second World War, Chao (1889-1981) honed her cookery skills at Harvard University while catering for attendees on a Chinese-language program taught by her husband, Chao Yuanren. Her publisher, John Day, had already published a number of other important China-related books, including Pearl Buck's The Good Earth (1931) and Lin Yutang's My Country and My People (1935). Buck, who was married to the manager of John Day, endorsed Chao's work on the dust jacket as a "contribution to international understanding", while it also received high praise from Hu Shih, the former Chinese ambassador in Washington who had also acted as a witness at Chao's wedding in the 1920s.
