In the introduction, she notes "I have included many recipes that have been tried out and found satisfactory during the last seven years. I am therefore trusting to the intelligence of those kind enough to read this book that, where 'eggs' are suggested, dried eggs can be used, margarine for fresh butter, top of the milk for cream.".
