Ainsi, la Cornell University (USA) vient de démontrer que la pomme contient des substances q…ui protègent les cellules cérébrales contre le stress oxydatif, coresponsable du développement de maladies neurodégénératives, au point que le vieux dicton anglais " An apple a day keeps the doctor away" est devenu : "An apple a day keeps Alzheimer's away" ("Une pomme par jour nous préserve de la maladie d'Alzheimer"). Le jus de raisin rouge améliore les fonctions cognitives et pourrait aussi jouer un rôle dans la prévention de la maladie d'Alzheimer. Consommé sous forme de vin rouge, il diminue le risque d'accidents cardiovasculaires grâce à sa teneur élevée en resvératrol. L'abricot est une source importante d'antioxydants, de caroténoïdes (dont le lycopène), de fibres et de fer. Sa consommation régulière pourrait avoir un effet bénéfique sur la gastrite chronique. Le cassis, la fraise, la framboise, la groseille, le raisinet, la mûre sont également des sources très importantes d'antioxydants. Les fruits sauvages présentent aussi un grand intérêt. Par exemple, la myrtille séchée est un antidiarrhéique et ses pigments de couleur bleu-noir améliorent la microcirculation dans les troubles veineux et même l'acuité visuelle nocturne ; elle peut aussi prévenir la baisse des fonctions cognitives chez les personnes âgées. L'airelle, de couleur rouge, est indiquée pour le traitement des infections des voies urinaires et des cystites, comme sa cousine canadienne, la canneberge (cranberry). Les baies jaune-orange de l'argousier sont extrêmement riches en vitamine C (trente fois plus que dans l'orange).
