In questo nuovo libro Ariel Toaff affronta un capitolo eccentrico ma insospettabilmente interessante di stori…a sociale dell'alimentazione: le abitudini alimentari degli ebrei italiani tra la fine del Medioevo e la metà dell'Ottocento. La cucina ebraica è determinata fondamentalmente dalle prescrizioni religiose, che proibiscono il consumo di determinati cibi e impongono procedure particolari di preparazione (ad esempio, di macellazione delle carni) perché il cibo sia idoneo, o "kasher". Ma al di là dei divieti, la cucina ebraica aveva comunque tradizioni proprie: ricorrendo a una vasta mole di documentazione originale (epistolari, dizionari, manuali, ricette), l'autore ricostruisce il variegato menu della tavola ebraica, dal vino alle carni, ai molti modi di preparare l'oca (il "maiale degli ebrei"), ai formaggi e ai pesci, alle paste e ai dolci. Il racconto si allarga poi a includere una ricostruzione della cucina e degli usi a tavola nelle case degli ebrei, ai pranzi delle occasioni e delle feste, al carnevale di Purim. Numero pagine 222.
