From the Preface: "Books of all sorts have been written on and about the art and science of cookery - an art that is regarded by many as the greatest, certainly the most appreciated one, and the exponents of which earn salaries which many artists who use color, tones or words to express themselves with, must envy. However, no one seems to have thought to construct a book like the present volume before. Anyone examining this volume will speedily recognize its two main parts. "The first contains the reproductions from the world's most unique and comprehensive "Menu Collection," exhibited at the Panama-Pacific International Exhibition, and the second comprises articles based on cookery with recipes to prepare numerous dishes, and matter pertaining to the art of serving the same.".
