This article deals with the kinds of food the Chinese ate in California prior to the 1849 gold rush. Eventually the Chinese explored and found ample "native" Chinese food in California, including seaweed in Monterey, as well as other unusual examples in other parts of Northern California which became common Chinese foods. . An obscure article, seldom found complete in two parts. . * Key aspects of Chinese food habits in the 19th century, as described by Spier: Dietary Staples: A typical Chinese meal included rice, soup, and several side dishes. Fresh Ingredients: There was a high emphasis on fresh, seasonal produce and vegetables.
