Hardcover. Zustand: Very Good Plus. Zustand des Schutzumschlags: Very Good Plus. First Edition. 1995. viii, 283pp. Light soiling to top edge. Otherwise the book and unclipped dust jacket are in excellent condition with no inscriptions. The European diet is a unique subject, and one which has been transformed in the last 100 years. This book is based on the 3rd symposium of the International Commission for Research into European Food History, held in the Wageningen Agricultural University in the Netherlands, 13-16 May 1993. International scholars survey the historical dimensions of food technology, science and marketing in relation to the emergence of the modern diet in Europe, and considers trends, developments and processes in the making of this diet from the second part of the 19th century to the present day. Analysis of the factors which have shaped the modern diet is essential for a better understanding of present and future dietary development in Europe. This book shows that although a recognizably European diet does not exist, there is nevertheless a common denominator across Europe. It shows how food technology, science and marketing have transformed the former meagre, monotonous food of Europe into the highly diversified diets of today. This study considers the social and historical aspects of Europe's experience of: nutrition and the food industry; cooling and freezing techniques: bread and the baking industry, milk and milk products: chocolate as a product for mass consumption; industrialization and dietary change; developments from corner shop to supermarket and food advertisements.…

Taschenbuch. Zustand: Neu. Neuware - Adel den Hartog shows how complex the food choices of humans have been for millenia. Those who wonder why we eat what we eat, will find out practicalities, such as availability of products, transportation and costs, but also physiological, cultural, geological, and psychological factors matter. Den Hartog points out the importance of access to food for individuals and groups, and the influence of their socio-economical position. Can someone be convinced to eat something that they perceive as inedible This book gives many examples of our limited flexibility, whether caused by an intolerance for genetical reasons, or because we simply did not know the food and want to keep it that way. Food habits are slow to respond to interventions, but these days, a meatless meal is no longer a sign of poverty. The book will attract the culturally interested reader. It can be used as a handbook for those who want to understand the background of our eating habits. The knowledge in this book can be used for a large range of interventions when it comes to food and life style. …

Taschenbuch. Zustand: Neu. Neuware - During the last decade the food and nutrition situation in developing countries has changed dramatically. For better or worse, urbanization and globalization have altered the diet and nutrition in both rural and urban areas. In many developing countries a persistent level of under nutrition exists both in rural areas and in urban slums due to less access to food needed for an active and healthy life. On the other hand, over-nutrition, or eating too much, has emerged among the middle-income groups. It is essential to have a better understanding of how people deal with their food in developing countries, in order to plan and implement food and nutrition programmes. This manual deals with the process of changing food habits and consumption patterns in developing countries. Nutritional implications, together with practical information is discussed in relationship to conducting field surveys. Part one of the manual provides insight into the dynamics of food habits and consumption and its socio-economic and cultural dimensions. Part two gives practical information on small scale surveys to be carried out within the framework of a nutrition issue; including data collecting on food habits and the measurement of food intake. This manual addresses professionals with practical or academic training and those who are involved in various types of food and nutrition programmes or related activities. It can also be used as a handbook in food and nutrition training courses at higher and at academic level.…
