The scarce first edition of this cookery and housekeeping guide from Anglo-Italian cook Charles Elmé Francatelli.Charles Elmé Francatelli, from an Italian family, was born in London in 1805, and learnt cookery in France. Coming to England, he worked for various aristocrats before becoming the chief cook to Queen Victoria in 1840. He influenced households in Britain and America to aspire to more complex, French-style dinners in imitation of the Queen, and resulted in a change in eating habits, including the modern two-course approach for both lunch and dinner.Illustrated with a portrait frontispiece, and numerous vignette illustrations.This was his third cookery work, after the successful 'The Modern Cook' and 'A Plain Cookery Book for the Working Classes'.With a twenty-four page publisher's catalogue to the rear.Rebound, retaining the original endpapers.A scarce first edition, featuring 1090 recipes and instructional tips, including aspic jelly, Flemish gauffres, and potted snipes.
