Filippo Rosato is the multi-award winning Executive Chef of the UK’s first vegan pizzeria, Purezza
Moving to the UK from a small town outside of Naples, he supported the restaurant’s launch in 2015.
Filippo shifted from his trade as an architect to following his passion. He spent several years researching and studying pizza, specifically the topic of making high digestibility dough for bread and pizza.
His main goal has always been to build upon and modernise the classical concept of Neapolitan pizza. He has done this both by enhancing the quality of the dough in the pizza he crafts, and by revolutionising concept by developing and using a range of superior plant-based cheeses and toppings. Through this he has shown that the culinary tradition of Neapolitan pizza is always evolving.
Filippo continues to train all of the kitchen staff that join Purezza, whilst also still taking to the ovens himself and preparing his unique and groundbreaking recipes in Purezza’s flagship Brighton branch.
Filippo has gone on to win multiple awards during his career with Purezza. These include National Pizza of the Year 2018 at the National Pizza Awards, PizzAward 2018 in Naples itself, and Best UK Pizza in the World Pizza Champion 2019 held in Parma.
Filippo continues to support Purezza’s recipe and kitchen development with ambitious expansion plans in place for 2020. He has also put many of his award-winning recipes to paper in the launch of Purezza’s first recipe book: Purezza Vegan Pizza – Deliciously simple plant-based pizza to make at home.
