Cranberries contain a lot of biologically active substances which are known to be good sources of vitamins, such as ascorbic acid. The cranberries product range includes fresh cranberries, dried cranberries, and juices. Some of the potential health benefits of cranberries are the prevention and reduction of cardiovascular diseases, and protection against lipoprotein oxidation reactions. Quercetin is one of the significant flavonoids found in cranberries. Ellagic acid represents 51% of the total phenolic compounds in the cranberries. Cranberries have great antioxidant properties due to phytochemicals, such as benzoic, cinnamic acid derivatives, and flavonols which rank them as one of the best among many other fruits. The addition of cranberry extract not only protects chhana bites against oxidative rancidity but also confers higher anti-microbial activity due to the low pH of cranberries.
