Über die Autorin bzw. den Autor: GEORGE KAROUSOS, Master Chef, is the owner of the award–winning Sea Fare Inn in Portsmouth, Rhode Island, and of Sea Fare’s American Cafe in Newport, Rhode Island. Chef Karousos is also the author of The Sea Fare’s Culinary Treasures. Some awards earned by Chef Karousos and the Sea Fare Inn are the 1985 International Association of Food Critics, Critics Choice–Best of 1985; Chaine des Rotisseurs Recognition of Excellence, Paris; Gold Medal for Seafood Preparation–International Competition of Head Chefs, Paris; Travel/Holiday Awards of Excellence as one of the most outstanding restaurants in the world; and the Restaurants & Institutions Ivy Award. BRADLEY J. WARE is Associate Professor of Culinary Arts at Johnson and Wales University. A graduate of Johnson and Wales University, Chef Ware achieved the American Culinary Federation ranks of Certified Culinary Educator and Certified Working Chef. During the 1980 America’s Cup challenge, he was personal chef for Ted Turner and the crew of the Courageous. He is also co–owner of The Food Group, a consulting firm specializing in nutritional analysis of menus and menu design. THEODORE H. KAROUSOS is Executive Chef of Sea Fare’s American Cafe. Chef Karousos apprenticed in culinary arts and restaurant management in France, Switzerland, Russia, and Italy, where he studied international cuisine.
