Simon Scrutton spent years as an Inspector of Restaurants and over 20 years as an award -winning chef. Being included in The Good Food Guides list of ‘Restaurants of the Decade’ and winning ‘Bistro of the Year for Great Britain’ from Egon Ronay.
It is curious how, when eating in a restaurant, many customers expect even quite complicated dishes to appear quickly – as if by magic. Accomplished cooks too, can forget the intensity of labour and time involved and can be as impatient as the next man when their apple tart takes 20 minutes. But these same people would be horrified if they thought their meal had been prepared in advance for the sake of speedy service. There are a few cookery books claiming to produce good results from just a few ingredients – I have found nearly all these recipes to lack depth of flavour – and to be disappointing. A hint of a spice here, or a herb there, makes all the difference.
Restaurants have to develop tricks to minimise these problems, whilst still producing fresh and delicious food. I have tried to pass on a few of these secrets in this book. I cooked a few of all these recipes each night in my restaurant, with one pair of hands – so all are manageable!
Many of the recipes can either be prepared in advance, to a certain point (for each recipe I have clearly shown where this point is) - or are quick to cook 'a la minute' – leaving you with the maximum time to relax with your family or guests.
