Drying is key post-harvest operation to inhibit mold and yeast growth. The application of appropriate groundnut sun drying surface is an essential counter mechanism for Aspergillus flavus and Aspergillus parasiticus invasion and aflatoxin contamination in groundnuts. The method is simple and low-tech with potential to sustainably produce aflatoxin free groundnuts in Zambia. This could serve to revamp Zambia’s market opportunities in the world for groundnut.
