A few prefatory remarks will be in place in offering this book to the public. In its preparation the supreme end sought has been that of usefulness; hence, the greatest care has been taken in the collection of the recipes. A very large proportion of them have been taken from my own private Cook Book, tested and proven to be reliable, and which have been of invaluable service to me through long years of housekeeping. All have been thor oughly tried by skilful housewives, who have cheerfully contrib uted the result of their experience toward the compilation of this volume, and who are willing to hold themselves responsible for their excellence. As the wife of an itinerant minister, occupying so many fields of labor, and being brought into contact with many Of the best housekeepers, I have had more than an ordinary Op portunity for collecting the best recipes in use. I do not claim perfection for my book, but I do claim that what I offer is reliable, and not a collection of recipes gathered at random from unknown parties and sources, simply to make up' a book.

In nearly every case the recipes have been inserted just as they have been received from the various contributors, without any change in the phraseology. For the sake of convenience, the sub jects treated have been carefully arranged and classified. I do not offer this book as a literary production, but as a reliable guide to the young and inexperienced housekeeper; and as such, it is submitted to a generous public.
