Chef Walter Paulson came to René at Tlaquepaque in 1993 as the new executive chef from his position as executive chef of L'Auberge de Sedona from 1991-1993. And for the next twenty-five years, Walter brought to the René team a passion for great food, wine, and service – dressed in an elegant yet relaxed atmosphere. His love of pure, fresh ingredients, created-from-scratch sauces, and consistency of preparation make his recipes exceptional. His passion for cooking has led him on a journey of transforming restaurant trends and lifestyles as he experimented with innovative incorporation of vegetarian, vegan, and gluten free dishes into existing recipes.
