Both authors are descendants of the Africans brought to the Carolina colony beginning in the late 1500s. The Gullah, as their people became known, are credited for the success of rice cultivation and production during the 18th and 19th centuries. Gerald is a Professor at Coastal Carolina University and Gantt is a retired restarateur. He is regarded as an expert on Low country cuisine.
