The softcover book offers 248-pages of recipes, stories and beautiful photographs of life in Maine. Professional tips and fun food factoids accompany the recipes. The cuisine at the inn touches many cultures and styles of cooking. The breakfast recipes included are some of my favorite morning specialties, ranging from breads and muffins to crepes and frittatas. Afternoon tea offers some of my favorite cookies, scones and biscotti recipes.
 
With dinner I explore various ethnic techniques to create a five-course menu to be remembered. And so can you. For example, start with a Caribbean appetizer of annatto grilled shrimp with a pineapple-avocado salsa, follow it with New England corn and lobster chowder, homemade peach sorbet and olive-encrusted rack of lamb with a rosemary bordelaise. To finish the whole meal off, try one of our famous French-inspired blueberry and hazelnut soufflés with a Frangelico crème Anglaise. The cooking class section of the book touches on —Caribbean, Dim Sum, Hors d'oeuvres, Pasta and Thai — and extend beyond into Haute Chinese, Spanish Tapas and Maine seafood.

With a distinguished career in the sophisticated restaurants of resort hotels behind him, Chef Michael Salmon turned his attention to the intimate dining experience of the Hartstone Inn in 1998. A graduate of the acclaimed Culinary Institute of America in Hyde Park, N.Y., Salmon was executive chef of the Sonesta Beach Resort Hotel and Casino in Aruba, among other high-level positions. In 1996, he was named Caribbean Chef of the Year in a contest sponsored by Food and Wine magazine and American Express.

Salmon combines classic French technique with fresh, local ingredients in menus he creates daily. His cooking has been praised by Travel & Leisure, Yankee and Down East magazines for its innovative flavor combinations and exquisite presentation. 
In addition to designing and preparing the breakfast and dinner menus at the Hartstone Inn, Salmon shares his love of food with inn guests and other food-lovers with a series of cooking classes in his custom-designed kitchen.
