 
    Fran Schaffer followed in the footsteps of her grandmother when she opened her restaurant in 1983. For 22 years, Nonna s Palazzo in Grand Island, Nebraska, served homemade Italian cooking the way Fran learned it in the kitchens of her youth. Fran Schaffer opened Nonna's Palazzo in July 1983 with the help of her mother, Nida Cappazzo Calhoun. The restaurant was named in honor of Fran's grandmother Chiara Brazzale ("Nonna"), and many of Nonna's recipes were used in the restaurant, bringing a special gourmet touch to classic Italian foods. Fran and her husband Dave continue to live in the gracious setting of Nonna's Palazzo, the historic Hamilton-Donald House, though the restaurant has been closed since 2005.
