Part 2, Recipes for Survival, teaches good old-fashioned cooking relevant to today’s needs, including how to roast a Thanksgiving Turkey to perfection. Part 3 is a course in How to Set Up Your New Kitchen and How to Survive In It. Prince explains what is needed to supply a basic kitchen. She teaches food safety and personal safety while cooking. “It’s not only my purpose to fuel the body with goodness and wholesomeness, but to fuel the mind and soul as well. Cooking is nurturing, and, yes, it can do all of that,” she adds. Her goal is to inspire and motivate young and old alike to get back into our American kitchens. “We know good stuff happens in the kitchen,” a theme she repeats throughout the book. “The kitchen is the Command Center of our lives. The kitchen is Mission Control. The kitchen is the Heartbeat of America, literally. Why wouldn’t you want to be there?” Prince is passionate about cooking and wants to pass on that love of good, healthful food to others. “Not too many folks cook at home anymore,” she explains. She believes we are spending less time in our kitchens and more time eating out. We aren’t passing down the “cooking gene” to the next generation, she adds. “I also believe this is one of the contributing factors to the obesity epidemic raging across our homeland.” She believes we are leaving our nutritional decisions up to the restaurant industry. “Those decisions are showing up around our waistlines.” Prince believes we can beat the obesity epidemic by teaching America to cook. “I believe we can go into the kitchen and have some fun while we cook our way out of illness and into good health. Janet McKenzie Prince is a niche-market independent publisher dealing with varied subjects, such as wildlife rescue, pet rescue and adoption, celiac disease, food and health. Through her Gluten-Free Awareness Campaign, Miss Janet’s Gluten-Free Zone, she offers advice and educational materials to restaurant owners and chefs about gluten-free cooking.
