Time Out for Cooking is an exciting collection of favorite recipes from Louisiana's great athletes and sports celebrities. The cookbook includes signed recipes from 114 sports personalities, both men and women (from Abramowicz to Winston). Each celebrity chose a favorite recipe that they love to prepare or have someone prepare for them. The participating celebrities represent all eras and cover the full span of Louisiana (from Abbeville to Zwolle). The 320-page book has more than 400 photographs. Each contributor has two pages dedicated to them which include photographs from their playing days, their recipe, and a picture of them today followed by a summary of what they are doing today!!

The cookbook includes three additional unique sections. One section is dedicated to "Tailgate Parties". You will discover a number of great recipes and helpful tips for your next tailgate party. Another section is dedicated to Sports Media personalities. Media personalities ad another 16 pages of wit and personal recipe favorites. And finally, the last section was contributed from the Louisiana Department of Agriculture. The Louisiana Department of Agriculture introduces Louisiana's own products plus the recipes to prepare them and all the nutritional information.

Terry Bradshaw's Chicken Melanzana w/Spaghetti

Garlic salt and freshly ground pepper
2 whole large chicken breasts (1-1/2 lbs. Total) split
1 small eggplant (3/4 lb.), peeled and cubed
1/2 cup chopped onion
1 can (6 oz.) tomato paste
1 cup water
1/2 teaspoon Italian seasoning
3 cups tender-cooked spaghetti
No side dishes except for a salad. The recipe represents all food groups. Four servings, 297 calories each

Season the chicken pieces with garlic salt and pepper and place them, skin side up, in a shallow roasting pan. Quick-bake in a very hot (450-degree) oven for 15 to 20 minutes, until well browned. Pour off all fat.

Combine all the other ingredients except the spaghetti and surround the chicken. Cover the roaster loosely with foil and bake at 350 degrees for 40 to 50 minutes, stirring occasionally, until the chicken is tender and the liquid is reduced to a thick sauce. Serve with 3/4 cup tender cooked spaghetti per person.

Terry Bradshaw is a legendary Louisiana football star. One of his most outstanding achievements was being elected to the NFL Football Hall of Fame in 1989. Terry has written several books which include No Easy Game (1973) Terry Bradshaw: Man of Steel (1979) and his autobiography Looking Deep (1989). Terry lives with his wife, Charla, and their two daughters, Erin and Rachel, in Westlake, Texas. He has worked with the Fellowship of Christian Athletes, Boys Clubs and Special Olympics, to name a few. Bradshaw's name was forever etched in pro football lore when he launched the "Immaculate Reception" pass that caromed to Franco Harris for a last-second 13-7 victory over Oakland in 1972.
