Tossing and Turning Turnovers

Here's how to turn a lowly slice of soft sandwich bread into a lowly turnover. You'll be surprised at what a little brushing of butter can do. These quickly executed turnovers are ideal for overtired kids, as well as overworked parents.

While we've offered up a range of fillings to tuck or spread inside, you should improvise to your heart's content.

* Preheat the oven to 400 degrees F.

* Roll out the crust-free bread with a rolling pin. The bread should be flattened to the thickness of a saltine.

* Brush the edges of the bread with the melted butter. In the center of each, spoon a generous tablespoon of filling, for spreadable items such as peanut butter or applesauce, cover all but the edges of the bread.

*Fold the bread into a triangle and press the edges together. Crimp the seam with a fork if necessary. Set the turnovers on a baking sheet.

* Brush the top of each turnover with additional butter and sprinkle with sugar. Bake until golden brown, about 20 minutes.


Ingredients:

4 slices of bread, crusts removed (cinnamon-raisin, buttercrust, whole wheat, brown bread, or other soft-textured breads)

2 tablespoons unsalted butter, melted

Your choice of filling (see ideas below)

A sprinkling of sugar

Makes 4 Turnovers


Fulfilling Fillings

* A spoonful of preserves and a smear of cream cheese

* A dollop of jelly and a layer of peanut butter

* Semisweet chocolate bits or bars (to fashion a mock pain au chocolat)

* Brie, applesauce, and chopped walnuts

* A smear of goat chees with pumpkin or apple butter

* Fresh berries (or peach or plum slices) with a sprinkling of sugar
