Really Sloppy Joes

Serves 4

1 pound lean ground beef (see Mom Tip 1)
1 medium onion
2/3 cup ketchup
1/4 cup water
1 tablespoon vinegar (any kind)
1 teaspoon Worcestershire sauce
1 teaspoon prepared mustard
1/4 teaspoon garlic powder
6 drops hot pepper sauce
4 hamburger buns, toasted (see Mom Tip 2)

Brown the beef in a large frying pan over medium-high heat for
about 10 minutes, stirring frequently at first to break the meat
into small clumps. If the beef seems like it's starting to burn,
turn the heat down to medium. It's not necessary to add oil
since even the leanest beef has fat in it. Carefully drain the
fat into an empty can and discard.

While the beef is browning, peel the onion and chop into
1/4-inch pieces. After the fat has been drained off, add the
onion to the beef. Cook for 2 minutes, stirring frequently. Add
the ketchup, water, vinegar, Worcestershire sauce, mustard,
garlic powder, hot pepper sauce and cook, uncovered, over
medium-low heat, stirring occasionally, for 10 minutes. Add up
to 1/4 cup more water if the mixture seems too dry. It should be
thick and juicy rather than watery.

Spoon one-quarter of the mixture into each bun half, top with
the other half and serve like a burger. Or, if you don't want to
get your hands sloppy, open the buns flat and spoon one-eighth
of the mixture on each bun half and eat with a fork. Repeat with
remaining buns.

Mom Tip 1: The amount of fat in ground beef varies from less
than 7 percent to at least 30 percent. The leaner the beef, the
higher the price, but the less fat you'll be draining off.

Mom Tip 2: If you toast the hamburger buns while the Sloppy Joe
mixture is cooking, they won't get soggy so fast.
