In the preparation of this text the translator has endeavored to produce a work which shall so far as possible convey the idea of Dr. Fischoeder, who wrote the book, as a practical guide to Stock Inspectors not only during their course of instruction but also during their active work as inspectors. N 0 claim is made that this is a complete scientific discussion; on the contrary, technicalities have been studiously avoided. The German laws have been omitted since they differ so radi cally from our own. As a substitute, the United States meat inspection regulations and instructions to inspectors as to various points in carrying these into operation have been in serted. For the use of these I wish to acknowledge my thanks to Dr. D. E. Salmon, Chief of the Bureau of Animal Industry, who also kindly rendered his valuable assistance in other ways in this translation.
