Artemis P. Simopoulos, M.D., is President of the Center for Genetics, Nutrition, and Health of the American Association for World Health. For nine years she chaired the Nutrition Coordinating Committee at the NIH. Victor Herbert, M.D., J.D., F.A.C.P., teaches at the Mount Sinai School of Medicine and is the author of several books, including The Mount Sinai School of Medicine Complete Book of Nutrition, for which he served as editor.
